Pork Loin with Mashed Sweet Potatoes

Roasted Pork Loin


  • 6 lb pork loin
  • dry rub of your choice
  • 1 to 2 cups of water/wine/stock


  1. Preheat oven to 325
  2. Lightly coat pan with non-stick spray
  3. Coat pork loin with dry rub and put in pan
  4. Pour liquid in the pan (helps keep pork loin from drying out)
  5. Cook at 325 until internal temperature reaches at least *145 degrees (usually 20 to 25 minutes per pound)
  6. Remove from oven and let stand for about 10 minutes before slicing

Mashed Sweet Potatoes


  • 3 lbs of sweet potatoes, peeled and cubed
  • 1/4 cup of butter
  • 1/2 cup of brown sugar
  • 2 tbsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp ground cloves


  1.  Boil potatoes until fork tender
  2. Drain water and return potatoes to pot
  3. Add butter, brown sugar, cinnamon, nutmeg, and cloves to potatoes in pot
  4. Mash potatoes and blend in the ingredients using an immersion blender (a hand mixer or a manual masher would work too)

* Botulism is killed at 138 degrees so 145 is a safe temperature for pork

    Sounds good. Those mashed sweet potatoes look yummy. I have lots of foods I love but really I hate cooking.
