Household Hints from Evil Mom: Tip 6

Welcome Evil Minions. Evil Mom here and, while I DO love you all. That’s not why I’m here today. It’s been far too long since I shared one of my helpful household hints. While I do consider myself a jack of all trades, Evil Mom is never above a short cut or a tip that makes life easier or better. In this case, it’s a tip that makes life yummier.

With three growing boys in the house, we buy a LOT of ground beef and chicken. It’s relatively cheap and it’s versatile. For years, when I was cooking chicken legs, I would strip the skin off before I baked them. Honestly, it wasn’t for health reasons (and I wouldn’t insult you, my evil minions, by telling you to watch your calories by removing the chicken skin). I took the skin off because I can not stand slimy chicken skin. If it isn’t crispy, I DON’T want it.

Well, a while back, I had an epiphany. Seriously, I can’t believe I didn’t think of this years ago. When you cook your chicken, put a baking/cooling rack across the top of either a cookie tray or a disposable baking pan. Spray the rack with non-stick spray and arrange chicken on it.
Season your chicken to taste.image
Bake at 400 degrees for about 50 minutes…I promise it won’t be dry. Turn chicken over half way through the cooking time.image
Your chicken will be nice and crispy and all the fat is drained off which is a side benefit.image
